How to make Chinese vegetable soup
vegetable soup recipe:
Spicy Tofu and Bok Choy Soup
Ingredients:
1 block of firm tofu, cubed
4 cups of vegetable broth
4-5 baby bok choy, washed and chopped
1/2 cup of sliced shiitake mushrooms
1/4 cup of sliced scallions
1 tablespoon of grated ginger
2 cloves of garlic, minced
2 tablespoons of soy sauce
1 tablespoon of rice vinegar
1 teaspoon of chili oil
Salt and pepper to taste
Directions:
In a large pot, heat up some oil over medium heat. Add the ginger and garlic and sauté until fragrant.
Add the sliced shiitake mushrooms and cook until they soften.
Add the vegetable broth, soy sauce, rice vinegar, and chili oil. Bring the soup to a boil and then reduce the heat to a simmer.
Add the cubed tofu and chopped bok choy to the pot. Let the soup simmer for about 5 minutes, until the bok choy has wilted.
Taste the soup and season with salt and pepper as needed.
Serve the soup in bowls, topped with sliced scallions.
