RUSSIAN SALAD
3 medium potatoes, peeled and diced
3 medium carrots, peeled and diced
1 cup of green peas
3 eggs, hard-boiled and diced
1 cup of diced pickles
1/2 cup of diced cooked ham or chicken
1/2 cup of diced apple
1/2 cup of diced onion
1/2 cup of mayonnaise
Salt and pepper to taste
Instructions:
Boil the potatoes, carrots, and green peas in separate pots until they are tender but not mushy. Drain and set aside to cool.
In a large bowl, combine the cooked potatoes, carrots, green peas, eggs, pickles, ham or chicken, apple, and onion.
Add mayonnaise to the bowl and mix well, making sure all the ingredients are coated.
Add salt and pepper to taste.
Chill in the refrigerator for at least 1 hour before serving.
You can garnish the salad with chopped fresh herbs, such as dill or parsley, and serve it as a side dish or as a light meal on its own. Enjoy
